“Cocinando tu salud”: find your favourite healthy recipes

Eating healthy and balanced food is easier than it seems. This was demonstrated during the 1st Cancer Prevention Day, held at the Seaside Los Jameos hotel in Lanzarote. An initiative that aimed to raise awareness of the role of food in our health, also during our holidays, and which laid the foundations for the hotel's current buffet. Since last October, guests at Los Jameos have a space called ‘Cocinando tu Salud’, with healthy recipes inspired by the book of the same name by oncologist Dr. Elizabeth Arrojo and chef Pablo Balbona, which were the inspiration for this conference. 

“Cocinando tu salud” recipes 

Breakfasts, snacks, starters, main courses and desserts. There are healthy options for every moment of the day. Here is a proposal for a complete menu to make at home. Take note!  

Start the morning with energy and antioxidants in their purest form: a bowl of milk with oats and nuts. Heat the milk or drink of your choice in a saucepan and add the oat flakes and leave it on a low heat. When it reaches a tender texture, transfer it to the bowl and add the toppings: nuts and berries. Leave to cool and it is ready to drink. 

Chefs

We continue with a simple but nutritious snack: red pepper hummus. To make it, cook 200 grams (about 7.05 oz) of chickpeas, roast the red pepper (and peel it) and mix the ingredients to make a thick paste. Then dress with a touch of citrus: lemon and mandarin juice. Prepare some carrot and cucumber crudités and enjoy! 

Starter and main course “Cocinando tu salud” 

Now it's time for the starter. In this case, we went for a pearl salad with chia and basil vinaigrette. And yes, pearls and not pears. The aim of this salad is to present everyday products in a fun way.   

To prepare this dish, you will need a corer, with which you will remove the pearls from the melon and courgette. Put them in a bowl and add the cherry tomatoes and grapes (both cut in half) and the mozzarella pearls. Season with salt and pepper and dress with a vinaigrette of EVOO, apple cider vinegar, chopped walnuts, mustard and turmeric. If you like, you can add other ingredients for garnish and flavour, such as mint or basil, or even a crunchy cheese tuile. 

Pasta

On to the main course: Tagliatelle with prawns and spinach. This dish is very versatile and suitable for all palates. It is a dish rich in carbohydrates, but it also contains a touch of protein and iron that our body needs.   

Ingredients:  

  • 350gr pasta  

  • 480gr of prawns  

  • 200gr Shiitake mushrooms  

  • 450gr tomatoes  

  • 400gr fresh spinach  

  • 2 cloves of garlic  

  • 200gr of EVOO (Extra Virgin Olive Oil)  

  • 200gr Manchego cheese 

To start making this recipe, clean 480 g (about 1.06 lb) of prawns and cut them into pieces. We continue by washing and chopping 450 g (about 15.87 oz) of ripe tomato and two cloves of garlic. In a frying pan, add a spoonful of olive oil and garlic and heat it. Chop 200g (about 7.05 oz) of Shiitake mushrooms and add them to the frying pan along with the tomatoes and prawns. Finish by adding 400g (about 14.11 oz) of fresh spinach to the pan. In a separate pan, cook 350g (about 12.35 oz) of tagliatelle until al dente. Once everything is cooked to perfection, serve both the pasta and the mixture on a plate and it is ready to eat.   

Healthy dessert “Cocinando tu salud” 

It is time to close the menu with a dessert. And in this case, we opted for orange juice jelly with red fruits and mint. Because it is possible to have a sweet and healthy moment.   

Ingredients:  

  • 450ml (about 15.22 oz) orange juice  

  • 6-7 sheets of gelatine  

  • Sweetener (honey, stevia or sugar)  

  • 150gr blackberries  

  • 150gr raspberries  

  • 150gr blueberries  

  • 150gr currants  

  • Green mint leaves   

To make this delicious dessert, start by soaking the gelatine leaves and adding them to a saucepan with the orange juice and stirring over a low heat with a whisk. When the gelatine is ready, pour it into small glasses and add the red fruits to taste. Add the final touch with the green mint leaves. An easy, healthy and delicious dessert for fruit lovers.
